Recipe:
- 3 scoops Vanilla Simply1 Protein Powder
- 1/2 cup kodiak cinnamon protein pancake mix
- 1/4 cup high protein oikos greek yogurt
- 1/8 cup coconut oil melted
- 1/4 cup Truvia stevia and cane sugar blend
- 3/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
Cinnamon “Sugar” Topping
- Truvia blend
- Cinnamon
Preheat oven to 350 degrees. Prep donut pan by brushing coconut oil on generously. Mix remaining coconut oil and all ingredients for donuts together. Bake for 10-12minutes.
While baking, mix together some cinnamon and truvia blend in a large bowl. It doesn’t take much!
Only allow donuts to cool for a few minutes after being in oven, then toss them in cinnamon and truvia. Serve warm for the mini-donut copy cat approach – but, also so good cooled too!
Keep in airtight container for up to 1 week after baking to enjoy safely.
Tips:
- Generously apply coconut oil and add that little bit to your dough mixture after. The key to a donut-like consistency is a little bit of oil! Even a little spray or brush of coconut oil right before they bake or utilizing an air fryer will really get that donut consistency.
- Play around with the bake time. I have underbaked and overbaked these and they are a bit better overcooked then under. They taste very much like pancakes when underbaked.
- No donut pan? Try donut holes! Form the dough into balls and give them a brush with coconut oil to get them a little crispy.
