This bread is guilt-free because it is FULL of protein, egg-less, dairy free.
INGREDIENTS
- 1/8 cup coconut oil (and some for pan prep)
- 3-4 ripe bananas
- 3/4 cup of high protein greek yogurt
- 1/4 cup truvia blend
- 2 cups coconut (or almond) flour
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1/2 cup chocolate essential meal replacement protein powder
- 1 teaspoon baking soda
- sprinkle of sea salt
- Dark chocolate chips
INSTRUCTIONS
- Preheat oven to 350 degrees.
- First, coat a loaf pan with coconut oil
- Next, in a large bowl, whisk together your coconut oil, bananas, truvia, vanilla, and yogurt until well combined.
- Next add in your cocoa, baking soda, flour, and salt. Mix until well combined.
- Then, fold in chocolate chips and stir. This will be thicker than most banana breads you use and the consistency depends on your protein powder. It takes some fiddling around.
- Fill loaf pans ⅔ of the way and add extra chips on the top if you would like. Bake for 30 to 35 minutes. Keep an eye, protein baking recipes can become very dense and dry when overcooked and everybody’s oven is a bit different.
